Grilled Texas Shrimp

1/4 cup vegetable oil
1/4 cup tequila
1/4 cup red wine vinegar
2 tablespoons Mexican lime juice
1 tablespoon ground red chiles
1/2 teaspoon salt
2 cloves garlic, finely chopped
1 red bell pepper, finely chopped
24 large raw shrimp, peeled and
de-veined (tails left on)

Mix all ingredients except shrimp in shallow glass or plastic dish. Stir in shrimp. Cover and refrigerate for 1 hour.

Remove shrimp from marinade, reserving marinade. Thread 4 shrimp on each of six (8-inch) metal skewers. Grill over medium coals, turning once, until pink, 2 to 3 minutes on each side.

Heat marinade to boiling in a non-reactive saucepan. Reduce heat to low. Simmer uncovered until bell pepper is tender, about 5 minutes. Serve with shrimp. Makes 6 servings.

If you would prefer to broil the shrimp instead of grilling them, place the skewered shrimp on a broiler pan rack. Broil with tops about 4 inches from heat, turning once, until pink, 2 to 3 minutes on each side.

 

Texas Governor A.W. Richards Fried Shrimp

2 eggs
1 c. milk
1 lb. large shrimp, uncooked
1 c. flour
1/2 tbsp. garlic salt
36 saltines, smashed with the fingers (should be coarse)

Beat the eggs and add the milk. Clean the shrimp and split down the back to "butterfly". Dip in the seasoned flour, then the egg and milk, then in the smashed saltines. Fry in deep fat until golden brown. Serve with a good cocktail sauce or remoulade of tatar sauce. (Serves 4.)

 

East Texas Salmon Croquettes

Make white sauce by melting 1 inch square of butter in skillet, add 2 tablespoon flour and 2/3 cup of milk. Heat and stir until thick. Remove from heat. Pour one pint of carp (juice included) into mixing bowl. Add 1 teaspoon lemon juice, 1/2 chopped onion, 2 or 3 eggs, then mix white sauce with this. Add 1/4 lb. crushed crackers. Fry croquettes in fairly deep fat until real brown. Don't over eat!

Cut up carp fish into small pieces. Pack in sterile jars, add 1 teaspoon salt. Seal and pressure for 90 minutes at 15 lbs. of pressure. When cool remove from cooker. This tastes like salmon
