Texas Cow Chips

2 c. melted butter
2 c. brown sugar
2 c. white sugar
4 eggs
1 tsp. salt
2 tsp. soda
2 c. Post Toasties
1 c. pecans
2 tsp. vanilla
4 c. flour
2 c. oatmeal
1 lg. pkg. chocolate chips
1 c. coconut

Blend first three ingredients. Stir in remaining ingredients. Bake 15 minutes at 350 degrees. Makes approximately 8 dozen regular sized cookies.

Larger cookies can be made so as to resemble cow chips by using 1/8 cup measuring cup to make them uniform in size. Makes 100 of them that way.

 

Texas Cowboy Bar Cookies

Cream: 2 sticks butter, melted eggs

Add: 1 tsp. soda 1/2 tsp. salt

Mix well with: 1 c. coconut 2 c. oats 1/4 c. chopped nuts, if desired

Mixture will make enough to fill 2 13 x 9 inch pans. Bake at 350 degrees until lightly browned.
