Pasta Salad
1
cup tomato juice
2 tablespoons cider vinegar
1 teaspoon dried cilantro leaves
2 teaspoons chili powder
1 teaspoon
ground cumin
Pinch of cayenne pepper
1 (4 ounce) can green chiles, drained
1/2 cup chopped scallions
10 ounces
linguine, cooked al dente and
well drained in a colander
1 cup chopped fresh or canned tomatoes
1
cup chopped green bell pepper
Combine
tomato juice, cider vinegar, cilantro, chili powder, cumin, cayenne, chiles, and
scallions. Toss dressing with cooked linguine. Top with tomatoes and green peppers.

tomatoes, diced
7 avocados, peeled and diced
3 white onions, chopped
2/3 cup oil
1/3 cup lemon juice, fresh
squeezed
1/2 cup fresh chopped parsley
4 or 5 Serrano or jalapeno chiles, seeded and chopped
3 or 4 garlic cloves,
chopped
Combine
all ingredients, cover and refrigerate.
