Style Baked Pork Chops
6
extra thick center cut pork chops
2 tbsp. shortening
2 med onions, sliced
1/2 c. uncooked rice
Salt and pepper
to taste
1 (No. 2 1/2) can tomatoes
Brown
pork chops on both sides in shortening. Place in a baking dish and cover with onions. Sprinkle rice over dish and season well
with salt and pepper. Cover with tomatoes and bake two hours in preheated 300 degree oven.

Ham Casserole

1/2 c. cubed cooked ham
1 c. drained cooked lima beans
1 (8 oz.) can cream corn style
1 c. shredded Cheddar cheese
2
tbsp. minced onion
1 tsp. Worcestershire sauce
2/3 c. biscuit mix
1/3 c. corn meal
1 egg
1/4 c. milk
Mix
ham, beans, corn, cheese, onion and Worcestershire sauce. Turn into greased 1 1/2 quart casserole. Cover and bake for 15 minutes.
Mix remaining ingredients and spoon over hot mixture, spreading batter evenly to edge of casserole. Bake uncovered 20 minutes.
Makes 4 servings.

Belle Buffet Casserole

c. rice
3 env. chicken noodle soup mix
9 c. boiling water
2 lb. bulk pork sausage
1 bunch celery
1 lg. green
bell pepper
2 onions
1 c. whole blanched almonds
Cover
and boil for 30 minutes: 2 cups rice, 3 envelopes of chicken noodle soup mix and 9 cups boiling water. Fry 2 pounds of bulk
pork sausage. Drain off most of the fat. Chop 1 bunch celery, 1 green bell pepper and 2 onions. Add to sausage and saute.
Stir in rice and chicken soup mixture. Add 1 cup whole almonds, halved (or slivered). Top with more almonds. Bake at 350 degrees
for 30 minutes. Makes 16 generous servings.

Casserole

med. head of cabbage
1 med. onion
3 lg. potatoes
3 lg. carrots
1 tsp. salt
1/4 tsp. pepper
2 lbs. cubed
ham, 1/2" thick
1 1/2 - 2 c. water
Coarsely
shred the cabbage; cube potatoes and ham; slice carrots; dice onions. Place all ingredients in a 4 quart saucepan. Stir to
mix well. Cook until all is tender. Pour in serving dish. Let stand, covered, for 10 minutes before serving.

Cannon Balls

lb. hot bulk sausage
2 c. shredded Cheddar cheese
2 c. biscuit mix
2 tbsp. grated onion
1 tbsp. poultry seasoning
Combine
all ingredients, mixing well. Roll into walnut size balls. Place on an ungreased baking sheet and bake at 400 degrees for
15 minutes. Drain on absorbent paper. Serve hot. Yield: About 48.
Sausage
Zucchini Casserole
1lb
ground sausage
1
large green pepper diced

large onion (any kind)diced
4tbs
butter or butter substitute

medium tomatoes (right out of garden!)sliced

8oz package shredded mozzerella cheese

medium zucchini (right out of garden!)sliced
In
medium skillet brown sausage and set aside.
In
large skillet, while sausage is cooking, melt half of butter.
Saute
onion and pepper until tender-crisp and remove from skillet.
Melt
remain- ing butter in large skillet and saute zucchini until tender-crisp.
Layer
on top of zucchini in this order...
sausage
pepper-onion
mixture
tomato
shredded
cheese
Put
lid on skillet to melt cheese.
